Recipes to make in the new year

2021 looks like a good year to try some new healthy, quick, and delicious recipes. Here are some yummy, vegetarian, and easy recipes to try in the new year:
Banana Pancakes
1 ripe banana
2 large eggs
1 tbsp butter
maple syrup
Mash the banana
Add eggs to the mashed banana
Heat a pan over medium heat and add butter
Drop batter onto the pan to form pancakes.
Cook until browned on both sides.
Drizzle with maple syrup and enjoy!
Caprese Salad
Fresh mozzarella
Tomatoes
Basil
Balsamic glaze
Salt
Pepper
Olive oil
*these ingredients do not have quantities because everyone likes different amounts of the different ingredients.
Slice the tomatoes and mozzarella into rounds. Roughly chop the basil leaves.
Arrange mozzarella and tomato in an alternating pattern on a plate.
Sprinkle basil leaves over the plate.
Drizzle with balsamic and olive oil.
Add salt and pepper (optional).
Creamy Roasted Cauliflower Soup
1 head of cauliflower
Pinch of salt
Pinch of pepper
1 tbsp unsalted butter
Chop cauliflower into bite-sized pieces.
In a pot, bring 4 cups of water and 2 tsp salt to a boil.
Add chopped cauliflower to the pot and maintain a boil for 5 minutes, or until the cauliflower is tender.
Remove the cauliflower from the pot and add to a blender.
Add cooking water until it reaches halfway up the cauliflower in the blender.
Blend the cauliflower until it reaches a consistency that you like.
Mix in salt, pepper, and 1 tbsp of butter to the soup.
Serve and enjoy!
